Spanish Green Beans Intense
Green bean is a member of the legume family. They are characterized by an intense green colour and have an elongated shape. When consumed before they mature the seeds are just formed and they are very tender and also very low in calories (less than 20 kcal per 100g). When they are more mature and the seeds are already formed, they also provide protein and carbohydrates, but remain low in fat.
These vegetables contain lots of water and fibre, so they are ideal for cleansing diets as they have diuretic effect. Also, they are an important source of minerals (mainly potassium, calcium and phosphorus) and folic acid and other vitamins (such as a, b6 and c).
Beans have beneficial effects on the whole organism by the amount of nutrients that provide: vitamin c, it promotes collagen synthesis and has antioxidant power; folic acid is much needed for the correct formation of the foetus, vitamin a helps to have a good vision and to boost the immune system; potassium, involved in muscle contraction and cardiovascular health …
Generally beans are steam cooked, boiled, baked and salted. Once cooked, they can be used in salads, marinated, as a side dish … As well as in stews and soups.
